I'm obsessed with Elana's Pantry

I haven't spent much time on posting anything lately because I've been spending my evenings reading / analyzing recipes and testing out possible dishes for Thanksgiving. It will be my first grain-free, dairy-free, soy-free, starch-free (SCD) Thanksgiving. Right now I'm obsessed with Elana's Pantry - so many great recipes. I can't cook fast enough!

It's IBS

The blood work is back and everything is "normal". (They did NOT do the test for celiac though, because I hadn't eaten gluten in a couple weeks and the test is expensive and it's not always accurate, and blah blah blah.) The doctor said they don't know what's wrong so they'll just call it IBS … Continue reading It's IBS

Have you seen Food Inc?

Have you seen the movie Food, Inc. yet? WOW. It's a real eye-opener. I had no idea the animals were being treated that bad. And there's no reason for such inhumane treatment of the animals! I wish "network television" would show it and all Americans would watch it. People need to know what they're eating.

What goes into chicken?

I've never liked the texture of "enhanced" chicken and have been seeking out non-enhanced chicken for years. Maybe with this editorial in the LA Times, the meat industry will change...? The Specific Carbohydrate Diet

I've been reading about the Specific Carbohydrate Diet. My "random & sudden" allergies to dairy, peanuts, & chocolate actually make sense inside this paradigm. SCD also explains why rice & quinoa hurt my tummy even tho they are gluten-free. Turns out the original diet cure for celiacs was GRAIN-free, not merely gluten-free. Hmmm. More to … Continue reading The Specific Carbohydrate Diet
